Ever had one of those nights where you have no idea what to cook? I had taken chicken out to grill and looked in my fridge and had some ingredients left over, so decided to see what I could make, and it turned out pretty well! Hubby was very happy with the end result 🙂
Ingredients :
4 skinless boneless chicken breasts cut into strips/chunks
1 can Tomato and onion mix
Fresh green beans
Garlic
Salt and pepper
Fresh basil
Spray a warm pan with olive oil / cooking spray. Season chicken breasts with salt and pepper, and put into pan. Add garlic while cooking.
Once chicken is brown, add the tomato and onion mix. To offset the sharpness of the tomato, I added a sachet of sweetener.
Leave to simmer for 2-3 minutes. Then add the fresh green beans and simmer for another 5 minutes to allow the green beans to cook a little, while still maintaining a bit of the crunch.
After 5 minutes, add the fresh chopped basil and stir it through the food. Then you are ready to dish up.
I served it with a baked potato and it was delish!!
This recipe serves 4 people. I am sure you can use any veg you have as well.
