High protein salmon supper

I discovered this recipe two weeks ago, have made it twice and its now become one of my favourite meals to make and indulge in.

If you read my post about nutrition, you would notice that 50 % of my diet consists of lean protein.  So loads of chicken, lean mince and fish. Salmon is a great high protein fish that is super-yummy, rich and filling.

Ingredients :

150 g fresh salmon – bought at Checkers or Pick and Pay’s fish counter.  (Checkers is cheaper though at about R22 for 15og)

7.5g soya sauce (I use the vital brand)

7.5g honey

Sunflower/cooking oil

Combine the honey and soya sauce in a bowl. Place the salmon in a zip-lock bag and then pour the sauce into the bag. Let the salmon marinade in the sauce for 1-8 hours.

Once you are ready to cook, put your stove on high and warm the oil. Then sear the salmon on each side for 2 minutes.

Once you have seared the salmon, turn the heat to low and pour the rest of the sauce from the bag into your pan.

Then cover the pan and cook for a further 4-5 minutes until cooked through.

I serve the salmon with half a cup of mashed potatoes and garlic green beans.
